Personally I'd rather cope with the slow (relatively) transition when
riding off-road than have to fiddle with a flip-up/down which would
mean a hand off the bars. YMMV, of course.

Internal hub gears or derailleur?

Might be worth finding something with a Shimano Alfine 8-spd hub if
you are going to get the bikes mucky, as they claim 'improved
sealing'. (Rolhoff is fine off road, AFAIK.)

incredibly useful for dinghy racing (esp. in rain) though - so maybe
