Usually I'm not a fan of solo guitar music for riding, but this guy's
stuff does it.

Someone on the acoustic guitar ng pointed to McKee just a couple of
weeks ago. An old high school buddy of mine got into tapping and became
an advocate of the Chapman stick.
This probably wouldn't work too well for cycling (esp. not "gnomus")

Tapping the ped's is steady state and is little used in training apart
from recovery periods and rides.
