Is there a website that maps cycling routes on lesser traveled roads?

Try also www.bikely.com . This is the same type of system (Google
Earth mashup with overlays of roadmap and aerial photo). Bikely has a
searchable database of routes in localities, but I couldn't find this
on gmap/ped. Bikely doesn't print very good maps, but the routeguides
can be good to print and carry, after you've downloaded or created a
route that you want to follow.

Is there an easy (i.e. non-techo, standard software, no gadgets) way
to get a decent printed map out of Bikely? It would put the finishing
touches on the site.

Do it with paper? For world cat use ur library card number in the
local libs online database: search 'bicycle Grand Rapids', transfer
locations to GPS thru topozone or ? Search 'Maps OT' or 'OT maps' in
RBT

Not really. Try saving the gpx then open it with Google Earth and print
out the map from Google Earth. If you pay for the upgrade for google
earth you can draw routes.
