Default triple chain ring alpine saves hi gear chain grind?

never rode a triple chain ring so the following may be a product of
ignorance.

I rebuilt an '87 steel lugged sport-tourer into a solid but still too
short touring bike.

Everything works. Except for 16/14 gear cluster cogs. The angle and/or
small diameter grinds the chain and I expect not exactly sliding around
the gears either.

A triple can ease the angle back to the hi gears, right?
And a triple can be specifically designed to reduce the angle.

Enter the Alpine triple read in the Sierra Club's Guide to bicycle
touring: two big chain rings with say 53 and 46 teeth, one low tooth
CR.

The idea occurred to me when grinding back there but in realizing the
Alpine triple setup was downhill gearing more than uphill.
Zooooooooooommmmmm!! splat. Watch out ups!!

Now! useable hi gears-no grind.

What shimming, spacers, or new available (now a sugino 3s) axle-chrome
moly? Produces the no grind hi gear?
