Default convert down tube shifter to bar-end shifter

Is it possible to convert the suntour down tube shifters (2 chainring in
the front and 8 at the back) to bar-end shifters? If so, any
recommendation?

Easily. You can buy bar end pods from Rivendell that will take your DT shifters
and put them on the end. Or use Campy or Suntour or Shimano bar ends.

FYI I did this will some Shimano RX100 7spd downtube shifters and it works
like butter (well, indexed butter).

Go to the rivendell website. They have this bar end adapters. You attach your
shifters to the adapters and you plug them in the end of the bars. They work
great. Here is the link:

As Rivendell warn, these do not work well if you have a shifter with a
non-removable curved spacer; however, if you are sure you will not want to
remount them on the DT, you can just file them flat as I have done with
mine.
