_ If your adjustable stem had only one pivot ( i.e. you didn't
fork out $200 for the Look Ergo ) what you may be feeling is
the effects of riding a bike with a very short stem. This can
feel quite squirrelly if you've got the stem at a very high
angle. To make a fair test you need to raise the bars and keep
the horizontal distance from steering axis to handlebar the
same or slightly longer.

_ Since you're fairly tall you're probably used to the feel of
riding with a longer stem than most and a shorter stem will
feel extra squirrelly.
