In fact, Contador is not even given rights granted to criminals,
because his acquittal has been appealed. In the USA, that is not
allowed in a criminal case.

Correct me if I'm wrong, but he wasn't charged with a criminal offense
in the US, and his case doesn't fall under US jurisdiction. So, I
have to ask, what's your point?
